I’M FINALLY DONE WITH CHRISTMAS SHOPPING. Woohoo! I’m cheap. Sorry but not sorry..
I’m having my Christmas tomorrow, I can’t wait! Christmas is my favorite holiday. Funny story my birthdays on Halloween. Haha yeah Christmas rocks. I’m getting all kinds of neat stuff to tumblrize my room. c:
Celebrated my Christmas Eve with banana pancakes for breakfast! Mmmm.
But now, I’m freaking out. I’m about to serve these to my grandparents for the first time. Like, they never had my cooking before. More flour? More banana? More cinnamon? Less cinnamon? Ahh!

1 banana, mashed
1 egg
1-2 tbs coconut flour
1 tbs peanut butter
1-2 tbs cinnamon
1 tbs skim milk

First, heat your stove to something low with some coconut oil.
Whisk your egg with a little fat free milk-maybe a tbs or two.
Then mash your banana.
Add the peanut butter.
Add the cinnamon
Add the egg.
Mix.
Make like a pancake. It might take a little longer but it tastes better on a low heat. =)

I’m sick. WAH. Sick people need soup. It’s just a must. So, for the first time in pretty much ever, I made some soup. Some damn good soup. I don’t want to toot my own horn or anything, but I make mean soup. My mom wanted to follow a recipe, but I finally persuaded her to let me take charge. She was glad she did.

Ingredients

6 cups vegetable broth
1 tbs extra virgin olive oil
A ton of vegetables (I uses almost 1 cup diced tomatoes, and I didn’t measure the rest but a bunch of diced carrots, cauliflower, peppers, onion, and minced garlic)
1 pound chicken

In a large Dutch oven, bring 6 cups of vegetable broth to a boil. Add chicken and simmer, covered, for 15 min. Remove chicken from broth and set aside to cool. Shred the chicken. Strain the broth through a colander lined with two layers of cheesecloth-(I used coffee filters!) Then, in the Dutch oven, heat 1 tbs olive oil. Throw in all your veggies! Once tender, stir in the strained broth, chopped tomatoes, oregano, and rosemary. Bring to boil. Add 3 tbs line juice and some thin lime slices. Simmer, covered for 20 minutes. Then, add the shredded chicken and heat. We toasted some tortilla chips to put in our soup! YUM.

Can I just take a moment to say, this generations music is. awful. Completely awful. I want to move to the 70’s. or the 60’s. or at least the 80’s. geez.
On a happier note, these brownies are amazing. Every year me and my mom bake brownies and listen to hit the road jack while eating the batter. Why only once a year? I don’t know-it seemed more traditiony. But after these brownies, I’m going to have a serious talk with her about making it once a month. Or week.
This is the first year making healthy brownies! My mom was really surprised they turned out good. She was pretty iffy about the whole black bean thing.

Ingredients
1 cup cooked black beans or canned no-salt-added or low-sodium black beans, drained
10 Medjool dates
2-3 tbsp raw almond butter
1 tsp vanilla
3 tbs unsweetened cocoa powder
1 mashed ripe banana
1 egg

Preheat oven to 250

Blend the vanilla, almond butter, dates, and beans together. (I had to mash the dates first)

In a separate bowl mix the egg, cocoa powder, and mashed banana

Mix both together. Try to make sure there’s no big chunks of date or banana.

Pour into an 8 x 8 baking pan and bake for about 40-60 minutes. My ovens weird though so I suggest checking yours every so often.

Feel free to experiment with this recipe and tell me how it goes! Two eggs? Honey? More black bean, no banana? I don’t know. You tell me!

Can I just say how happy I’ve been? Big dramatic, even stressful, but SUCH GOOD changes are occurring. And I’m really, really happy. 🙂 Celebrated all night, oh god it was fun. And weird. Oh so weird. 

 

ANYWAYS, this morning I made muffins. Heavenly muffins. 

 

1/3 cup coconut flour

Almond flour to make 1/2 cup full of flour

1/3 cup chopped pecans and walnuts
1/4 tsp baking powder
6 eggs
6 medjool dates 
1/2 cup liquified organic coconut oil
1 tbs cinnamon and/or pumpkin pie spice (I actually probably did a bit more) 
1/2 cup pumpkin purée
1 tbs pure vanilla extract
6 (Or whatever’s desired. This is also optional) melted dark chocolate chips 
5 chopped dark chocolate chips 
1/2 packet sweet leaf (Optional) 
 
Preheat oven to 350 degrees.
In a medium sized mixing bow, combine eggs, vanilla, pumpkin puree, salt, baking soda, and cinnamon/pumpkin pie spice.
Blend with a hand mixer until smooth.
Add coconut flour to batter, and continue to blend.
In a small bowl, add pitted medjool dates, cover with 1 tablespoon of water and heat in the microwave for 30 seconds.
Mash the dates witha fork, add another tablespoon of water, and 
mash again.
Stir melted chocolate and melted coconut oil together
Add date mixture and melted chocolate/coconut oil to the mixing bowl, and blend until smooth.
Stir in the chopped nuts and chocolate chips
Place cupcake papers into a muffin tray, and fill each paper cup 3/4 full of batter.
Bake muffins at 350 degrees for 30-35 minutes.

These were delicious! First clean muffins I’ve ever made! The family loved them. 😀

Next time I make these, I think I’ll try them with a tablespoon or two of light coconut oil to make the muffins more moist.

I haven’t tried that many recipes, as I’m so obsessed with trying to make my own. But once in a while I get tired of eating mush, and follow a recipe.

My poor baby 😦

Cheered myself up with some protein pancakes! Here are two of my favorite pancake recipes..

Chocolate banana protein pancakes

1/2 mashed banana
1.5 scoop chocolate protein powder
2 tbs egg whites
1-2 tsp cocoa powder
Cinnamon
Pinch baking powder
Cook like normal pancakes, I love topping this with cinnamon, nuts, and my chocolate cream which is just chocolate protein powder mixed with a little water and sometime pb2.

Cottage cheese protein pancakes

2 egg whites
1/4 cup nonfat cottage cheese
1/2 cup oat flour
Nutmeg
Cinnamon
Pumpkin pie spice
Pinch baking soda
A bit of milk to even it out if needed

Or you can replace some of the flour with pumpkin purée or mashed banana or a little bit of both 🙂 This won’t come out like a normal batter but it’s delicious cooked like a pancake. I suggest cooking these smaller pancakes, it would probably fall apart if you did a big one.
I love to top these with pear butter and pumpkin pie spice.

I’m moving!! I’m staying in the most divine hotel ever. I love saying “divine”, it makes me feel so much more mature. Haha. Me, mature. Yeahh. We shouldn’t be here more than a week though, then I’m going to stay at my friends house for another week. If we aren’t moved in somewhere by then, we will live at a close family friends house until we do. We’ve (We being my mom, brother, and i) got our eye on the most perfect townhouse. I’d be neighbors with a few friends and in walking distance of a shopping center. The house was just beautiful too. My auto correct just changed beautiful to peanut day. Ok that’s cool. I’ll change it back now.

Anyways, to celebrate the big move I made a mug cake. And it was gooood. I’ve been making so many mug cakes these days, I’ll share two of my recipes.

Chocolate protein mug cake.
1 scoop (Or maybe a little less) chocolate protein powder
1-2 tsp cocoa powder
3 tbs egg whites
A bit of (any kind) milk to even out if needed
1/3 mashed banana
Dash of chocolate pb2 and chia seeds
Cinnamon to taste
Pinch of baking powder
I didn’t add any, but I’m sure raw organic honey or grade a maple syrup would taste good in it.

Pumpkin mug cake.

1/3 cup pumpkin purée
1 tsp vanilla extract
3 tbs coconut or oat flour or 1/3 mashed banana
3 tbs egg whites
1 tbs maple syrup
Nutmeg
Cinnamon
Pumpkin pie spice
Chia seeds

Ok, cauliflower rice has effected my life more than I though  a vegetable could. You see, when I first started cooking healthy, it didn’t go very well. My family isn’t big on cooking or health, and I’ve never been one to follow recipes. It was a mess. But hey, you’ve got to start somewhere, right? So, my friends birthday was coming up. She wanted me to bake her healthy brownies…So I did. And I brought them to school. And she shared it with just about everyone. Did I mention how awful these brownies were? Yeah, awful. Like, really bad. Anyways, my reputation as a cook kind of went down hill. Then, an event came up and I signed up to cook. Hell yeah, I was turning that rep around. I forced myself to follow a recipe, and oh my god. Thank god I did. If you haven’t yet, go buy the cookbook Well  Fed. I made her curry cauliflower rice and morrocon meatballs. They were to die for! I did replace the lamb with chicken though. Everyone was blown away by how amazing it was. The best part is, my mom made some meatballs too. With brown sugar and gross but addicting things, but nobody really liked it. Especially not as much as the morrocon meatballs with whole food ingredients. Woohooo. The rice inspired me to make my own cauliflower rice recipe. My brother thought it was actual rice, he loved it! This is pretty magical because my brother is the pickiest eater ever, especially when it comes to healthy foods.
To make cauliflower rice all you do is chop it up and pulse it in a food processor until it looks similar to rice. I seasoned mine with:
-2 tbs onion powder
-2 tbs garlic powder
-1 tbs chili powder
-1 tsp dried oregano
-1 tsp cayenne pepper
-1 tsp ground cumin
-Black pepper to taste
^Seriously tastes amazing together. My mom and I call this the magic seasoning.
Also added a pinch of lemon to it! Mmm.

 

Uhmm..
Damn.
So so gooood..
I think I’ll tell you what amazingly delicious thing I’m talking about now.
Banana and almond butter. (Or other nut/seed butter)
Its so easy and delicious. Just chop a banana, top each slice with almond butter and freeze overnight.
Eat, drool over remembering it, make more. Repeat. That’s how it works with these little pieces of heaven.

I love salmon. Too much. Usually on my salmon I just stick to some herbs and lemon, which is delicious by the way, but I felt like something more sweet last night. So tada! Enjoy.

(I didn’t do exact measurements, so you’ll probably have to do a little adjusting to your taste)

9oz salmon
Half a lemons juice
About 2 tsp Dijon mustard
About 1.5 tsp raw organic honey
A few dashes of fresh basil and dried oregano and black pepper
Mix it all together and coat your salmon with it, then onto the grill!
I made a little extra of the sauce to put on after the grill, just because I love sauces.
